All of the above can be offered with an expert local guide or useful advice on routes, places to visit and particular places to have lunch can be provided if the preference is to venture alone.
But in the afternoon the guided tour of one of the farms of the Collio wine consortium will be unmissable. Cormons boasts over forty winemakers and for this reason it is considered the heart and soul of the Collio Goriziano. The local white wines have been recognized among the best in the world and is the perfect place for anyone interested in learning more about the history and winemaking traditions of this region. The winemaker will share his world by fascinating you with his stories of the production of his wine, perhaps revealing some little secrets. There will certainly be a tasting of the products as a worthy conclusion to the visit to the winery of the farm.
The evening at the end of an amazing day will end with a memorable dinner in a Michelin starred restaurant at the foot of the hills of Monte Quarin, just outside Cormons. All dishes are a mix of local Trieste cuisine – jota and plum gnocchi, for example – but there is also a variety of Friulian dishes including frico, omelette and barley. The kitchen specializes in Slovenian noodles mlinci and zlikrofi, as well as game, roasted or grilled to perfection. The veal shank, sculpted at the table, simply melts in the mouth. This is authentic, traditionally cooked food that is refined to an exquisite level through added touches like fried sage leaves, elderflower syrup, and herbal sorbets.
