ITINERARY

Day 1 :

A tour guide will be happy to follow you on a panoramic tour to begin to appreciate the beauty of the Collio area and get acquainted with the magic that certain landscapes offer. The first stop will be towards a small and charming village located on top of one of the many hills; this place "rich in history" is San Floriano del Collio. You will be welcomed by a member of the Formentini family, a noble ancient family that owns a very nice castle, embellished with an inn where there will be a rich tasting of local cheeses and cold cuts and a few glasses of some of the best white wines of which the Collio is famous. in the world.
We will continue with destination Cormons, the heart of the Collio, crossing an ups and downs of hills dotted with vineyards, olive trees, ponds, which will leave you entranced by the beauty of the views offered. In Cormons, a sommelier will be happy to welcome guests by offering them a small tasting of wines belonging to the Consortium of Collio wines. It will be an introduction to the winemaking art of the area. At the end you will be accompanied to the booked accommodation for a nap, a refreshment and calmly you will prepare for dinner in one of the most renowned restaurants in the district famous for its gourmet dishes, extremely sought after in the raw materials used, but which take into account seasonal products and local tradition.

Day 2 :

Breakfast and then relax around Cormons as you wish.
Relaxation will be the watchword in this enchanting area, enjoying the landscape, colors and scents of the region. Driving a Vespa, a bicycle or walking the result will always be entrancing. Breathtaking landscapes, cycle paths or pre-established routes following a story inserted in a special app, will make you experience hours of carefree freedom and serenity.
All of the above can be offered with an expert local guide or useful advice on routes, places to visit and particular places to have lunch can be provided if the preference is to venture alone.
But in the afternoon the guided tour of one of the farms of the Collio wine consortium will be unmissable. Cormons boasts over forty winemakers and for this reason it is considered the heart and soul of the Collio Goriziano. The local white wines have been recognized among the best in the world and is the perfect place for anyone interested in learning more about the history and winemaking traditions of this region. The winemaker will share his world by fascinating you with his stories of the production of his wine, perhaps revealing some little secrets. There will certainly be a tasting of the products as a worthy conclusion to the visit to the winery of the farm.
The evening at the end of an amazing day will end with a memorable dinner in a Michelin starred restaurant at the foot of the hills of Monte Quarin, just outside Cormons. All dishes are a mix of local Trieste cuisine - jota and plum gnocchi, for example - but there is also a variety of Friulian dishes including frico, omelette and barley. The kitchen specializes in Slovenian noodles mlinci and zlikrofi, as well as game, roasted or grilled to perfection. The veal shank, sculpted at the table, simply melts in the mouth. This is authentic, traditionally cooked food that is refined to an exquisite level through added touches like fried sage leaves, elderflower syrup, and herbal sorbets.

The last day in the hilly area will include a second visit to a farm accompanied by a local guide who, through a splendid walk in the countryside among the vineyards, will take you to one of the best producers of white wine in the Collio Goriziano. History, tradition and family tales will accompany you along the winemaking process, seeing the steel tanks, the barriques and the cellar. You will taste some varieties of wine such as Ribolla Gialla, Friulano, Malvasia.
Afterwards and after an informal lunch, or alternatively some free time, you will have the opportunity to buy some bottles of wine at the Enoteca Consorzio Collio, a pivotal point around which the winemakers of this area revolve.
